The original Brown Derby restaurant, located on Wilshire Blvd opposite the Ambassador Hotel, opened in 1926. Each booth featured a signature light fixture in the shape of a derby and the waitresses’ skirts were starched into a derby shape. It was one of the few places to stay open until 4am, and instituted the custom of paging customers and bringing a telephone to the table. This was the 1st of four Brown Derbys but the most famous one was the one located just south of the corner Hollywood & Vine.
